Technical Overview

Fermentation temperature is one of the most critical process variables in brewing and winemaking. Yeast activity, flavour compound development, carbonation, and final product character are all directly governed by how precisely temperature is controlled across the fermentation curve.

Calvion designs and fabricates thermal jacket systems for the full range of brewery and winery vessel types from wort cooling after the kettle through active fermentation, conditioning, and cold stabilisation using pillow plate panels on cylindrical walls, cone bases, and dish heads.

Each system is sized to vessel geometry, target fermentation profile, glycol or chilled water supply conditions, and peak heat load requirements including exothermic fermentation peaks and cold crash cooling duties.

Engineering Advantages

Why Calvion for Wine & Brewery Thermal Systems

01

Full Vessel Coverage

Pillow plate jackets are fabricated to cover the cylindrical shell, conical base, and dish head giving breweries and wineries full thermal control across the entire vessel surface without dead zones or uneven cooling.

02

Rapid Fermentation Response

Laser-welded pillow plate channels distribute glycol or chilled water with high turbulence and low fluid volume, giving fast response to fermentation heat spikes and enabling precise temperature curve management during active yeast activity.

03

Multi-Zone Control Ready

Jacket panels can be divided into independent zones — upper cylinder, lower cylinder, and cone allowing brewers to manage temperature gradients across the tank height during fermentation and cold crash phases.

04

Glycol System Integration

Calvion sizes jacket systems against the glycol chiller or ice bank capacity, ensuring the thermal load during peak fermentation can be handled without undersized flow rates or excessive pressure drop across the vessel circuit.

05

CIP-Compatible Construction

All product-contact surfaces are fabricated with smooth welds, no crevices, and accessible geometry that supports full clean-in-place cycles without manual intervention or risk of residue accumulation.

06

Retrofit and Expansion

Clamp-on jacket panels can be fitted to existing tanks without welding or vessel modification, allowing breweries and wineries to upgrade thermal performance or expand capacity with minimal production downtime.
